Den g\u00e5r ut p\u00e5 att tillverkningen styrs av erfarna \u00e4ldre m\u00e4n som, med allvarliga miner och grovstickade ylletr\u00f6jor, g\u00e5r runt och \u00f6ppnar ventiler och sl\u00e5r p\u00e5 pumpar vid exakt r\u00e4tt \u00f6gonblick. Detta kan de g\u00f6ra d\u00e4rf\u00f6r att de med tiden har skaffat sig en fantastisk intuitiv k\u00e4nsla f\u00f6r vad som \u00e4r just &#8221;r\u00e4tt \u00f6gonblick&#8221;. En k\u00e4nsla som bara l\u00e5ng erfarenhet kan ge.<\/p>\n<p>Egentligen \u00e4r den d\u00e4r bilden inte s\u00e5 l\u00e5ngt ifr\u00e5n sanningen om hur whisky har tillverkats historiskt och p\u00e5 m\u00e5nga destillerier \u00e4r det fortfarande ungef\u00e4r s\u00e5 det g\u00e5r till. Och ingenting skulle v\u00e4l n\u00e5gonsin kunna ers\u00e4tta den d\u00e4r fingertoppsk\u00e4nslan. Eller?<\/p>\n<p>En av f\u00f6rdelarna med att bygga ett helt nytt destilleri \u00e4r att man inte beh\u00f6ver ta s\u00e5 mycket h\u00e4nsyn till hur saker fungerade f\u00f6rr. Arbetet i ett destilleri \u00e4r repetitivt och varje dag genomf\u00f6rs samma moment om och om igen. D\u00e4rf\u00f6r best\u00e4mde vi oss f\u00f6r att bygga en h\u00f6gt automatiserad anl\u00e4ggning. Det g\u00f6r att vi, med teknikens hj\u00e4lp, kan se till att de moment som ska repeteras genomf\u00f6rs p\u00e5 exakt samma s\u00e4tt, g\u00e5ng efter g\u00e5ng.<\/p>\n<p>Under driften ger destillat\u00f6ren olika parametrar till datorn. Dessa blir instruktioner f\u00f6r hur automationen ska sk\u00f6ta processen. Och det som utm\u00e4rker en datorstyrd automation \u00e4r att den kan g\u00f6ra samma sak p\u00e5 samma s\u00e4tt, g\u00e5ng efter g\u00e5ng efter g\u00e5ng, utan att distraheras av annat och utan att ha d\u00e5liga dagar. Det l\u00e5ter kanske mindre romantiskt men det ger oss b\u00e5de b\u00e4ttre kontroll och st\u00f6rre noggrannhet i tillverkningen. Och framf\u00f6r allt frig\u00f6r det tid s\u00e5 att vi som jobbar i destilleriet kan \u00e4gna oss \u00e5t det som maskinerna \u00e4r s\u00e4mre p\u00e5 eller inte klarar alls.<\/p>\n<p>F\u00f6renklat kan man s\u00e4ga att automationen sk\u00f6ter grovjobbet med att \u00f6ppna och st\u00e4nga ventiler, reglera pumpar och kontrollera tryck och temperaturer. Det ger utrymme f\u00f6r destillat\u00f6ren att arbeta mer sensoriskt, och justera parametrar som direkt p\u00e5verkar produkten.<\/p>\n<p>H\u00e4r \u00e4r n\u00e5gra av de saker som vi l\u00e5ter maskinerna hj\u00e4lpa oss med, efter instruktioner givna av destillat\u00f6ren:<\/p>\n<u>Malningen<br \/>\n<\/u>&#8211; Hastigheten av inmatning av malt i kvarnen<br \/>\n&#8211; F\u00f6rbl\u00f6tningsvattnets temperatur och fl\u00f6de<br \/>\n&#8211; Temperaturen p\u00e5 sk\u00f6ljvatten vid kvarnens valsar<br \/>\n&#8211; Hastigheten p\u00e5 pumpningen av den f\u00e4rdiga m\u00e4skblandningen\n<u>M\u00e4skningen<\/u><br \/>\n&#8211; Kontinuerlig m\u00e4tning av t\u00e4theten p\u00e5 m\u00e4skb\u00e4dden<br \/>\n&#8211; H\u00f6jd och hastighet p\u00e5 m\u00e4sktunnans omr\u00f6rare &#8211; utifr\u00e5n v\u00e4rdet p\u00e5 m\u00e4skb\u00e4dden<br \/>\n&#8211; Pumphastighet f\u00f6r att t\u00f6mma ur v\u00f6rten\n<u>Destilleringen<br \/>\n<\/u>&#8211; Trycket i pannorna<br \/>\n&#8211; Effekten till pannorna<br \/>\n&#8211; Temperaturen p\u00e5 kylvattnet\n<p>Dessutom m\u00e4ts kontinuerligt alkoholstyrkan p\u00e5 spriten som kommer ur pannorna, temperaturen p\u00e5 gasen i pannorna och temperaturen p\u00e5 alla v\u00e4tskor. Vi vill l\u00e4mna s\u00e5 lite som m\u00f6jligt \u00e5t slumpen.<\/p>\n<p>Vi brukar s\u00e4ga att datorerna g\u00f6r 80% av jobbet. Resterande 20% ber\u00f6r det sensoriska och det kan vi som jobbar i tillverkningen fokusera p\u00e5 &#8211; till 100%. Det k\u00e4nns modernt och det g\u00f6r skillnad. Men det betyder inte att maskinerna kan g\u00f6ra whisky helt p\u00e5 egen hand.
