Dessa \u00e5ngor kyls ner och ur pannorna kommer ett destillat som nu \u00e4r vattenklart och har en styrka p\u00e5 ca 30%. Det h\u00e4r destillatet kallas f\u00f6r l\u00e5gvin och destilleras ytterligare en g\u00e5ng f\u00f6r att \u00f6ka styrkan och smaken p\u00e5 destillatet.<\/p>\n<p>Vid den andra destilleringen sparas inte all spriten. De f\u00f6rsta dropparna som l\u00e4mnar pannan \u00e4r orena, likas\u00e5 de sista. Endast mittendelen \u00e4r av dryckeskvalitet. Det \u00e4r denna mittdel vi samlar upp i en separat tank f\u00f6r att sedan lagra till whisky. F\u00f6rsta och sista delen skiljs bort och destilleras igen tillsammans med n\u00e4sta batch l\u00e5gvin.&nbsp;<\/p>\n<p>M\u00e4sken fr\u00e5n ett j\u00e4skar (5 400 liter) delas upp mellan v\u00e5ra tv\u00e5 m\u00e4skpannor som har en volym om 2 700 liter vardera. N\u00e4r pannorna \u00e4r fulla s\u00e4tts de under vakuum innan kokningen p\u00e5b\u00f6rjas. Trycket s\u00e4nks och d\u00e4rmed \u00e4ven kokpunkten. Vid endast 63\u00b0 b\u00f6rjar det koka i pannorna. \u00c5ngorna som l\u00e4mnar m\u00e4sken \u00e4r rikare p\u00e5 alkohol och n\u00e4r dessa kyls ner erh\u00e5lls ett destillat som har en slutgiltig styrka p\u00e5 30%.&nbsp;<\/p>\n<p>L\u00e5gvinet fr\u00e5n vardera m\u00e4skpanna pumpas sedan till en av v\u00e5ra tv\u00e5 spritpannor. Dessa pannor har en volym p\u00e5 2 000 liter. N\u00e4r pannorna \u00e4r fyllda s\u00e4tts dom under ett l\u00e4ttare vakuum och kokpunkten s\u00e4nks till 78\u00b0. Under destillationsprocessen delas destillatet upp i tre delar: Huvud, hj\u00e4rta och svans. Huvudet och svansen inneh\u00e5ller orenheter och separeras bort. Endast hj\u00e4rtat samlas upp f\u00f6r att bli whisky. Huvudet och svansen sparas och destilleras igen tillsammans med l\u00e5gvin fr\u00e5n n\u00e4sta batch. Den f\u00e4rdigdestillerade spriten har en alkoholhalt p\u00e5 mellan 65 och 75 % beroende p\u00e5 vilken produkt vi producerar.<\/p>\n<p>N\u00e4r vi skulle v\u00e4lja tillverkare f\u00f6r v\u00e5ra pannor \u00e5kte vi runt till ett antal kopparslagare p\u00e5 olika h\u00e5ll i Europa, i Skottland s\u00e5v\u00e4l som p\u00e5 kontinenten. Valet f\u00f6ll slutligen p\u00e5 Frilli i Toscana i Italien. De har tillverkat destilleriutrustning i \u00f6ver hundra \u00e5r och f\u00f6rsett s\u00e5v\u00e4l whiskydestillerier som vodka- och grappatillverkare med pannor. De \u00e4r ocks\u00e5 v\u00e4ldigt duktiga p\u00e5 modern styr- och reglerteknik.
