Ziel des Schrotens und Mahlens des Malzes ist es, die in der Braugerste enthaltene St\u00e4rke zu erreichen, damit sie sp\u00e4ter ausgelaugt und in Zucker umgewandelt werden kann.<\/p>\n<p>Die gebr\u00e4uchlichste M\u00fchle f\u00fcr Whisky arbeitet nach dem traditionellen Trockenmahlprinzip. Sie ist in der Regel mit mehreren Walzenpaaren ausgestattet, auf denen das Getreide zun\u00e4chst gequetscht und dann gemahlen wird.<\/p>\n<p>Das Problem beim Trockenschleifen ist nicht, dass es zu einem schlechteren Ergebnis f\u00fchrt, sondern dass bei diesem Verfahren viel Staub entsteht, der durch einen Funken entz\u00fcndet werden und einen Brand oder sogar eine Explosion ausl\u00f6sen kann. Daher erfordert das Trockenschleifen besondere Sorgfalt. Au\u00dferdem ist ein zus\u00e4tzlicher Zwischenschritt erforderlich, bei dem das zerkleinerte Rohmaterial behandelt wird, bevor es in den Maischprozess einflie\u00dft.<\/p>\n<p>In Schottland wird fast ausschlie\u00dflich trocken gem\u00e4lzt. Eine Tradition, die seit Jahrhunderten besteht.<\/p>\n<p>Unsere M\u00fchle ist eine Nassm\u00fchle, bei der das Malz vor dem Mahlen eingeweicht und dann mit hei\u00dfem Brauwasser geschrotet wird. Durch das Schroten wird das Malz in Spelzenst\u00fccke, groben Schrot und Mehl zerlegt. Diese Mischung wird als Schrot bezeichnet und ist die Grundlage f\u00fcr das Maischen. Zusammen mit dem Brauwasser nimmt es eine breiartige Konsistenz an. Da wir bereits in der M\u00fchle mit der Zugabe von Wasser beginnen, k\u00f6nnte man sagen, dass unser Maischprozess dort beginnt.<\/p>\n<p>Die greifbarsten Vorteile des Nassschleifens sind<\/p>\n<ul>\n<li>H\u00f6herer Extrakt. Bei der Nassvermahlung entsteht eine gr\u00f6\u00dfere Menge an feinem Schrot als bei der Trockenvermahlung, was einen besseren Zugang zum Extrakt im Kern erm\u00f6glicht.<\/li>\n<li>Schnellerer Prozess. Die Zeit, die f\u00fcr das Mahlen einer Charge ben\u00f6tigt wird, wird reduziert, da die Zwischenschritte des traditionellen Mahlens entfallen k\u00f6nnen.<\/li>\n<li>Geringerer Energieverbrauch. Die Nassvermahlung erfordert im Vergleich zu anderen, traditionelleren Methoden weniger Energie.<\/li>\n<li>H\u00f6here Sauberkeit. Der Schleifer w\u00e4scht sich nach jedem Gebrauch selbst.<\/li>\n<li>Erh\u00f6hte Sicherheit. Es besteht keine Gefahr einer Staubexplosion, da die Rohstoffe beim Mahlen eingeweicht werden. Das bedeutet, dass die M\u00fchle in der Mitte der Brennerei stehen kann, ohne dass eine Explosionsgefahr besteht.<\/li>\n<\/ul>\n<p>Eine Einweichm\u00fchle ist zwar mit h\u00f6heren Investitionskosten verbunden, hat aber eindeutige Vorteile, die dazu f\u00fchren, dass sie in der Welt des Bierbrauens und nun auch in moderneren Whisky-Brennereien immer h\u00e4ufiger eingesetzt wird.<\/p>","protected":false},"excerpt":{"rendered":"<p>Eine M\u00fchle, in der das Malz vor und w\u00e4hrend des Mahlens eingeweicht wird, ist in den Whiskybrennereien der Welt noch relativ un\u00fcblich.
