Urspr\u00fcnglich war es vor allem ein praktisches Gef\u00e4\u00df, um das Getr\u00e4nk w\u00e4hrend des Transports zu lagern. Erst als das Getr\u00e4nk lange genug im Fass aufbewahrt wurde, etwa auf der Reise \u00fcber den Atlantik oder von Asien nach Europa, erkannte man die Auswirkungen des Getr\u00e4nks.<\/p>\n<p>Im 18. Jahrhundert erkannte man, dass die in F\u00e4ssern gelagerten Erzeugnisse tats\u00e4chlich besser schmeckten und dass man daher f\u00fcr gelagerte Erzeugnisse mehr verlangen konnte als f\u00fcr ungelagerte. Daher wurde es \u00fcblich, das Destillat einige Jahre lang im Fass zu lagern, bevor es an seinen endg\u00fcltigen Bestimmungsort verschifft wurde.<\/p>\n<p>Die g\u00e4ngigste Praxis war die Lagerung des Getr\u00e4nks in Eichenf\u00e4ssern. Eichenholz ist ein hartes, dichtes Material, das sich gut f\u00fcr eine d\u00fcnne Bindung eignet und nicht ausl\u00e4uft. Zugleich ist das Holz por\u00f6s und l\u00e4sst geringe Mengen Sauerstoff durch. Das Fass atmet. Die chemische Reaktion, die entsteht, wenn die Fl\u00fcssigkeit auf den Sauerstoff trifft, verleiht ihr den Charakter des Fasses.<\/p>\n<p>W\u00e4hrend f\u00fcr schottischen Whisky vorgeschrieben ist, dass er nur in Eichenf\u00e4ssern reifen darf, k\u00f6nnen wir, die wir au\u00dferhalb Schottlands Whisky herstellen, frei experimentieren. Dennoch dominieren Eichenf\u00e4sser die Whiskybest\u00e4nde der Welt. Ein bisschen traurig ist das schon, finden wir.<\/p>\n<p>Bei Agitator stellen wir das Traditionelle in Frage und arbeiten daher mit verschiedenen Holzarten, haupts\u00e4chlich aber mit Kastanienholz. Kastanienholzf\u00e4sser werden in unterschiedlichem Ma\u00dfe in allen Agitator-Produkten verwendet.<\/p>\n<p>Kastanie ist ein noch por\u00f6seres Holz als Eiche und daher schwieriger, dichte F\u00e4sser herzustellen. Ist das Fass aber erst einmal dicht, reift der Inhalt viel schneller und nimmt den Geschmack des Fasses in fantastischer Weise auf. Au\u00dferdem sind die F\u00e4sser im Allgemeinen kleiner als die traditionellen Eichenf\u00e4sser, so dass die Spirituose mehr Kontakt mit dem Holz hat.<\/p>\n<p>Das Kastanienfass verleiht dem Wein eine tiefere Farbe und mehr Tannine und Rauheit. Aber es verleiht uns auch komplexe Aromen von Trockenfr\u00fcchten und Leder sowie eine nat\u00fcrliche S\u00fc\u00dfe von Honig und Vanille. Unser Ziel ist es, dem Verbraucher ein au\u00dfergew\u00f6hnliches Geschmackserlebnis zu bieten.
