Und es ist mit Sicherheit der Teil, der die meiste Zeit in Anspruch nimmt.  Um \u00fcberhaupt als Whisky bezeichnet werden zu d\u00fcrfen, muss die Spirituose mindestens drei Jahre in Holzf\u00e4ssern reifen. Frisch aus der Destillerie ist die Spirituose kristallklar. Erst im Fass erh\u00e4lt der Whisky seine Farbe.<\/p>\n<p>Det f\u00f6rsta som h\u00e4nder innan spriten fylls p\u00e5 fat \u00e4r att den sp\u00e4ds ner med vatten. Efter destillering har spriten en alkoholhalt p\u00e5 65 till 75 %, beroende p\u00e5 vilken produkt som produceras. Vi sp\u00e4der normalt ner den till 55 % innan vi fyller faten. Detta \u00e4r l\u00e4gre \u00e4n de flesta andra destillerier. Vi v\u00e4ljer att g\u00f6ra s\u00e5 f\u00f6r att viktiga smak\u00e4mnen lakas ut b\u00e4ttre ur tr\u00e4et vid en l\u00e4gre alkoholhalt. Att alkoholhalten redan vid fatfyllningen \u00e4r l\u00e4gre g\u00f6r ocks\u00e5 att vi beh\u00f6ver tills\u00e4tta mindre vatten f\u00f6re buteljering. Vi har ju redan lagrat, och smaksatt, det vattnet.<\/p>\n<p>Olika fattyper ger whiskyn olika smakegenskaper. Vi lagrar p\u00e5 en l\u00e5ng rad olika fat och varje f\u00e4rdig produkt skapas ofta av en kombination av flera olika fattyper som vi sedan blandar inneh\u00e5llet fr\u00e5n. I v\u00e5rt lager har vi fat av olika storlekar &#8211; fr\u00e5n 500 liter ner till 100 liter &#8211; men ocks\u00e5 en blandning av nya fat och fat som tidigare anv\u00e4nts f\u00f6r att lagra andra drycker. Vi har ocks\u00e5 fat tillverkade av olika tr\u00e4slag, vilket \u00e4r mer speciellt. I Skottland s\u00e4ger regelverket att whisky bara f\u00e5r lagras p\u00e5 fat av ektr\u00e4. Vi kan agera mer fritt och har uppt\u00e4ckt att lagring p\u00e5 fat av kastanjetr\u00e4 ger ett fantastiskt resultat i s\u00e5v\u00e4l smak som doft och kul\u00f6r.<\/p>\n<p>Die meisten unserer F\u00e4sser fassen 200 Liter und enthielten fr\u00fcher amerikanischen Bourbon. An zweiter Stelle kommen unsere F\u00e4sser aus New American Oak, deren Innenseite stark ger\u00f6stet ist. Wir haben sowohl den klassischen Typ mit glatter Innenseite als auch F\u00e4sser mit innen eingefr\u00e4sten Rillen, \u00e4hnlich vergr\u00f6\u00dfertem Kordsamt. Dadurch wird die Oberfl\u00e4che des Holzes vergr\u00f6\u00dfert - denn wenn die Spirituose so mehr Kontakt mit dem Holz hat, reift sie schneller.<\/p>\n<p>Wir sind experimentierfreudig. Deshalb reifen wir in ganz unterschiedlichen F\u00e4ssern, in denen fr\u00fcher auch etwas extravagantere Weine oder Destillate gelagert wurden. Eiswein oder Orangenwein, Rum, Mezcal oder Triple Sec: Wir wollen einfach etwas ganz Besonderes schaffen.<\/p>\n<p>Unser Lager befindet sich direkt neben der Brennerei. Das bedeutet ein einfaches und effizientes Handling der F\u00e4sser und extrem kurze Transportwege. Die F\u00e4sser werden sowohl stehend auf Paletten als auch liegend in hohen Metallregalen gelagert.<\/p>\n<p>Vi jobbar aktivt med varma temperaturv\u00e4xlingar genom att tillf\u00f6ra \u00f6verskottsv\u00e4rme fr\u00e5n destilleriet &#8211; det blir ganska varmt n\u00e4r vi k\u00f6r v\u00e5ra fyra pannor &#8211; ut i lagerlokalen. Det g\u00f6r att temperaturen i lagret under \u00e5ret varierar fr\u00e5n 30 plusgrader ner till n\u00e4ra noll.
